    ALBANY, N.Y. -- State officials are warning consumers not to drink "unpasteurized" raw milk from a dairy in upstate New York because of possible Listeria contamination.

    Australians’ taste for cheese is continuing to mature, with the types and styles we consume changing dramatically in recent years according to cheese connoisseurs. Free trade agreements and changes to legislation has seen the variety of cheeses avail able swell, but some still claim we are limited compared to overseas markets, because of restrictions on raw milk cheese.

    If you come across a wedge of Valbert cheese, grab it. Fromagerie Lehmann, in the tiny Lac St. Jean town of Hébertville, has stopped producing this artisanal raw-milk farmhouse cheese, with its earthy aroma and buttery hazelnut flavour. A few kilograms of the award-winning Valbert are left in specialty cheese shops. But after that there will be no more.

    As if dealing with a recession and stricter emissions standards weren't enough, carriers of fresh fruits and vegetables must also find ways to meet customers' new food safety demands. While the transportation industry is more than willing to do its share to make sure the nation's supply of fresh produce is safe, it's also looking for more of a hand from its supply chain partners.

    Food safety experts may allow the sale of some locally made unpasteurised milk cheeses. Cheese aficionados claim heating and pasteurising milk destroys the cheese's flavour-giving bacteria and that dangerous bacteria such as listeria can live in any soft cheeses, including those that are pasteurised.

    Does raw milk do a body good? Despite health warnings, some people think so -- and they're going to great lengths to get it. The unpasteurized, straight-from-the-udder product is illegal to sell in Illinois stores. But it's not illegal to drink. And city slickers are increasingly seeking out the $6-a-gallon, farm-fresh product they say is key to their healthy lifestyles.

    BURLINGTON, Vt. -- Twenty-one people who may have consumed raw milk from a cow infected with rabies have been advised by the Vermont Department of Health to discuss rabies vaccination with their health care provider.

    There is a reason Louis Pasteur is famous. His experiments proved that microorganisms like bacteria can cause disease, and he developed a process - pasteurization - that stops or slows the growth of bacteria in beverages such as wine, beer and milk.

    We thought the science on raw milk was pretty much settled back in the 19th century, when it was discovered that it was making people sick, thanks to salmonella, E. coli and all kinds of other germs. Louis Pasteur came to the rescue with his process of heating milk and killing the bacteria.
