Beef Products Inc.’s former director of environmental health and safety Bruce Smith plans a press conference on Tuesday at which he’ll unveil his new book, “Pink Slime Ate My Job,” and a civil suit filed against “a national news broadcasting company and other prominent individuals involved in the ‘pink slime’ ground beef controversy,” according to a press release posted on media websites.
Efforts to reach Smith for further comment were unsuccessful.
Smith has been a vocal supporter of the “Beef is Beef” campaign, often commenting on blogs and websites on the safety and value of BPI’s product, lean finely textured beef. His book is being published by Rauttnee Publishing Co. based in Sioux City, Iowa, a company that is listed on the Internet as having been established by Smith in 2004.
Smith was one of some 730 employees who lost their jobs when BPI closed down three of its four plants and laid off 86 corporate employees in May.
BPI is not involved in any way in the publication of the book or Smith’s lawsuit, a company spokesman said.
