ONE in seven restaurant kitchens failed the food safety and hygiene test in the City of Melbourne last year.
The Leader can reveal that 483 food businesses were hit with notices for breaches of food safety and hygiene standards after inspections by council officers, while three ended up in court for serious or repeat offences.
The council refused to name and shame eateries that flouted food-safety rules, but three Melbourne eateries convicted in the past 18 months are listed on a Department of Health food safety register.
Melbourne Council spokesman Sam Bishop said the most common problems uncovered were cleanliness, pest control, temperature control, structural issues and record-keeping.
Mr Bishop said angry diners lodged 417 complaints with the council in 2011 and the council launched five investigations into potential food-poisoning outbreaks.
